  BASIC SPONGE MIX
 

 

 

Ingredients

4oz 100g PK Flour Mix
4oz 100g Castor Sugar
4oz 100g Soft Margarine
6 grams Egg Replacer
4 tbsp Water

 

Method

Whisk egg replacer into water in a jug.
Cream margarine and sugar together until light and fluffy.
Whisk in egg replacer solution. Add PK mix.
Turn into your favourite cake or buns.
Bake at 200 C, 400 C or Gas mark 6

Fairy Cakes will take approx 10-12 mins.
Victoria Sandwich will take approx 20 mins.

 
RAISIN SPICE COOKIES
 
 

Ingredients

150g - 5oz Margarine or butter
80g - 3oz Granulated sugar
2 Tbsp Brown sugar
1 Tsp Baking powder
1 Tsp Spice (e.g. allspice, cinnamon or ginger)
125g - 4oz Raisins
50mls - 2 oz Water
2 Tsp Vanilla essences
1 Pouch 375g P.K.U Mix

 

Method

Preheat oven to 350°F, 160°C or gas mark4.
Cream margarine and sugar together until light and fluffy.
Mix in water, vanilla essence and baking powder.
Add P.k.u mix and stir until well combined.
Add raisins and stir in well.
Drop a teaspoon full of mix onto a lightly oiled baking tray.
Press down lightly with a fork.
Repeat until all the mix is used.
Bake for 15 minutes until golden brown.
C ool slightly before removing from the pan.

 
BREAD RECIPE (for use in a Bread Machine)
   
 

Ingredients

350g PK flour mix
300ml tepid water
1 teaspoon dry yeast pinch of salt )

 

Method

Dissolve yeast in tepid water and pour in baking tin.
Mix in the flour mix
Sprinkle over salt
Fast bake by following the breadmaker instructions.

 
PASTRY RECIPE

 
 

Ingredients

8 oz-225G P.K. Flour Mix
4oz-100g Margarine/butter
Pinch of salt
1oz-25g Sugar
1 T S egg replacer
6 TBSP Water

 

Method

Sieve P.K. flour into mixing bowl
Rub in margarine, until mix resembles fine bread crumbs
Stir in egg replace, salt and sugar
Add water and mix to a soft "dough like" consistency
Roll out and use for Apples pies, Mince pies or your own favourite.
